Hamburger Stroganoff

  • 1 lb hamburger
  • 1 large onion chopped
  • Canned mushrooms
  • Garlic
  • Cream of Mushroom
  • 16 oz of cream cheese
  • 1/4 c Butter
  • Salt/Pepper
Brown hamburger and drain....leaving a little grease left. Saute onions in the butter, add, garlic, mushrooms and soup. Stir until coated. Add sour cream along with salt/pepper. Allow to cool and freeze in a 1 gallon freezer bag.

I added chopped green peppers and used garlic powder instead of the cloved garlic. I also added parsley flakes to the mixture before freezing.

It's my idea to collect all of these with pictures to make a cookbook on shutterfly or snapfish.

Yummy Cream Puffs from the Betty Crocker Cookbook

  • 1 cup water
  • 1/2 cup butter
Bring these to a boil in a saucepan then stir in:
  • 1 cup sifted flour
Stir vigorously over low heat until mixture leaves the pan and forms into a ball (about a minute) then add 4 eggs one at a time. Beat mixture until smooth and velvety. Drop from spoon onto ungreased baking sheet. Bake until dry. All to cool slowly. Bake at 400 degrees for 45-50 min. Makes about 8 large cream puffs.

Cut in half and fill. I used pudding as my filler which was Vanilla this time. Put in fridge and serve cool. YUMMY!

This came from my Grandma Bruna's cookbook with was dated 1953:)

Purple People Eater

I went off to teach my HCC class and had Kyra set up with her paints to create her playdough ornament/magnets for her grandparents right? I told Ryan that I was leaving and that he should probably come in the kitchen to watch her.
WELL.........
When I got home Kyra was saying "Picture Mommy!" I thought she had painted a pretty picture for me but she was headed to the camera. Ryan helped her get the camera out and on and said "Ready to show mommy?" She said "YES!" and this is what I got! A little purple child!
Apparently she had already had paint on her from her mouth down and Ryan decided to paint the rest! She is growling here....surely daddy wasn't thinking K-State Wildcats?????:)

BBQ Freezer Meatballs

  • 2lbs ground hamburger
  • 2 eggs
  • 2 c quick oatmeal
  • 1 c minced onion
  • 1 c milk
  • black pepper
Sauce
  • 3 c ketchup
  • 2 c brown sugar
  • 3 tablespoons liquid smoke
  • salt
Mix all ingredients and make 72 meatballs. (Made bigger ones and got 50+) Use smaller sized meatballs so sauce will cook through. Spoon 1/2 sauce over meatballs. Place flat in a pan and bake for 1 hour at 350 degrees. Let cool then add meatballs and remaining sauce to 1 gallon sized freezer bags.

I always doctor up my recipes with other spices. When mixing the meat I put in garlic salt and some chili powder. I always like to add more to the sauce also. I use about 1.5 ketchup/1.5 BBQ sauce. I also added some 57 sauce in the mixture this time. In addition to the liquid smoke I use Worcestershire sauce too. Make a little more sauce than what the recipe calls for because it is always nice to have more to spoon over the meatballs.

Meatballs are always easy to make and yummy to eat!

Makin' Muffins

Kyra and her daddy made Wild Berry muffins Sunday night while mommy was making her freezer meals. Kyra does a great job lining the muffin pan with liners and she loves to dump all the ingredients in the bowl. It was a great family cookin' night!

New Freezer Meals

Pimento Mac n' Cheese

  • 1 lb elbow pasta
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons of butter
  • 1 small onion finely chopped
  • 2 gloves of garlic
  • 1 tablespoon paprika
  • salt and pepper
  • 2 tablespoons flour
  • 2 cups milk
  • 2 tablespoons hot sauce
  • 3 cups shredded cheddar cheese
  • 2 3-oz jars of pimento drained
  • 1/2 cup parsley
Boil your pasta and set to the side.
In a large pot heat over medium heat heat your oil and butter. Add the onions, garlic, paprika, salt and pepper until softened. About 5 minutes, then add the flour and cook about a minute. Whisk in milk and hot sauce and bring to a bubble. Turn off heat and add 1/2 of the shredded cheddar cheese until melted. Add pasta to mixture and mix. Once mixed fold in the pimento. Top with rest of shredded cheddar cheese. Thaw and bake at 400 degrees until cheese is brown and bubbling.

I was able to get two meals out of this recipe to put in the freezer.

Broccoli Casserole
  • 2 packages of frozen broccoli
  • 1/2 cup onion or minced onion
  • 1 small jar of cheese whiz
  • 1 can Cream of Mushroom Soup
  • 1 can Cream of Chicken Soup
  • 2 cups of cooked rice
  • Extra Virgin Olive Oil
Saute onion and broccoli in a pan with the oil. Add all the rest of the ingredients except the rice. Mix well. Remove from heat and stir in the cooked rice. Thaw and cook at 350 degrees for 30-40 minutes.

Again I was able to get to meals out of this recipe to put in the freezer.

I got these containers at Dollar Tree of course for $1.00/package. They come in a package of three. These make very nice freezer containers for freezer meals and they are inexpensive.

Keeping her "Freebum" safe!!

Her Auntie Freedom and Grandma Green came to visit this weekend! She LOVES her Auntie! She went to give Grandma a hug and then at the last minute she swung over to Freedom!:) Too cute. She is Freedom's little shadow. Here Freedom is getting a movie for Kyra and Kyra was holding her legs to keep her "safe" from falling. Her shirt is off because she was in between playing dress up hence all the clothes on the floor. She normally is always fully dressed I promise!

First Day of 6th Grade

Back to School Night (August 18th)
My room was finished and ready for the kiddos to arrive. It was great to have the giddy feeling of the first day of school and to see my class for this year! Yeppers, there is a little belly action goin' on:) On a side note..not only was this the week for school to start but this was the week that the little guy or gal decided to make their presence known to me by KICKING me!!!:) Felt him or her a week earlier than I felt Kyra. I felt Kyra at 16 weeks and this one at 15 weeks.

My beautiful tin can pencil holders all finished and stuck to desks with Velcro!

Just another view of my classroom.

Awe...my awesome shelves my awesome husband made me!!!! Isn't he awesome??

My classroom window. My co-worker and friend Jill found these awesome window crayons!!! I am needing to get some of my own. I'm planning on keeping a calendar of events on my window for parents and students.

Had a great first day of school today! The kids were GREAT!!! Let's see how great it will be tomorrow!!:)

Oh To Be A Kid!!

Kyra is trying to draw "Patrick" from Spongebob Squarepants

Kyra and mommy were doing some chalk drawings this weekend. This was mommy's attempt at drawing Spongebob aka "coupon" according Miss Kyra.

Kyra and I went to Wal-mart and she saw "Bumblebee" on a T-shirt display. Mommy couldn't resist...so Kyra got some new "PJ's" LOL. Kyra calls them her "Biggie Bumblebee shirt". She loves this shirt and we have a hard time getting it off her. Who knew!

This was so funny!!! This bag was actually a mask we made and she turned it into a "pony". She likes to be a Cowboy and was telling it to "Giddy Up!"

So the summer is over and school begins this week! I think I'm ready for work but then again I've really enjoyed the last couple of weeks of summer now that I'm feeling somewhat better. I "think" I've felt the little girl/guy move this week!!! I'm 15 weeks and growing:) LOL Went shopping in Topeka on Saturday for some new clothes but cut it short because I have had more headaches with this pregnancy. I came home and slept from 6-10 pm I was so exhausted.

Today "Sunday" after church and lunch we went in and tried out the new HyVee grocery store. LOVED IT!!!

Well, Kyra is telling me that it's dark so I think that is my clue to head to bed and prepare for a long day at work tomorrow.

Night and until next time....

Add the beef and brown it, breaking it up as it cooks, about 5 minutes. Stir in 2 cups of the tomato sauce, the brown sugar and the Worcestershire sauce and simmer for 5 minutes. Let cool slightly.

Drizzle a 9-inch x 13-inch casserole dish with 1/4 cup of the remaining tomato sauce. Stuff each manicotti shell with 1/4 cup of the meat mixture and place them side by side in the casserole dish.

Spoon the remaining tomato sauce over the manicotti and top with the cheese. Bake until golden and bubbly, about 15 minutes.

In a bowl, mix together 1/4 cup of the soup, beef, bread crumbs, egg, and

freeze it now and brown the mushrooms and freeze them too, or you can freeze
everything after cooking)
In a skillet over medium heat, cook patties, a few at a time, until browned
on both sides, spoon off fat, set aside.
Stir in remaining soup and mushrooms, return the patties to the skillet,
reduce heat to low, cover and simmer 20 minutes or until done, turning

freeze.

I have to give credit to two people, first my friend Jill for giving me 98% of these recipes and to my mom for helping me get them prepared. We had lots of fun in the kitchen and hopefully she will make it down to our house and we can make more!!!
